Lehsun Mirch Instant Achaar
Instant garlic and green chile pickle

Ingredients
- 100g green chiles, cut into 1 inch pieces
- Garlic, enough to make 2 tbsp paste
- 2½ tbsp mustard oil
- ½ tsp turmeric (haldi) powder
- 1 tsp red chile (lal mirch)
- 1 tsp onion seeds (kalaunji), leveled
- 1 big lemon
- Salt, to taste
Directions
Heat oil in a pan/wok till it changes its colour. Add green chiles and cover for 10 seconds, remove the cover, add garlic paste and stir for 10-15 seconds until the raw smell goes away.
Add rest of the ingredients and cook on medium heat. After a minute lower the heat and let it simmer for another minute. Turn off the heat. Cool and keep in an air tight container.
