Bhindi Gosht

Mutton and okra curry

Ingredients

  • ½ kg mutton
  • 250g okra (bhindi)
  • 100g yogurt
  • 1½ tsp garlic paste
  • 1½ ginger paste
  • 2 large onions
  • Salt, to taste

Spices

  • ½ tsp red chile powder
  • 1½ tsp coriander (dhania) powder
  • ½ tsp turmeric (haldi) powder
  • ½ tsp cumin (zeera) powder
  • ½ tsp garam masala
  • ½ tsp onion seeds (kalonji)
  • 1 cinnamon stick (dalchini)
  • ½ cup oil, and some more for frying okra

Directions

Wash the okra and spread on paper towel to dry. Cut each into 2 or 3 pieces according to their size. Fry the okra lightly.

Pour half cup oil into a pressure cooker. Add one large sliced onion and sauté till golden brown. Add the washed and well drained mutton. Do not stir for a few minutes. Then sauté till dry.

Add garlic paste first then the ginger paste. Grind the onion and add the paste. After the raw smell goes away add the yogurt, salt and spices. Keep stirring till oil surfaces.

Add water and pressure cook for 20 minutes. A thickish curry is desirable. Once the steam escapes, add the okra — no stirring!

Move the cooker around so that the okra mixes in well with the curry. Bring to a boil and check to see if tender.
